Maple Syrup
In late winter, when the days grow longer, it is time for our family to venture into the woods to tap the maple trees. Our family has been producing maple syrup for 3 generations.
Though many advancements have been made to syrup production over the years, our family prefers to continue practicing the old school way- utilizing pails and spiles. In keeping with tradition, we are able to create a meaningful connection with the trees and the process, learning the subtle details of this unique craft and producing a quality maple syrup that has become a household favourite.
We have been lucky over the years, to share this skill with others, near and far, building community and connection just by sharing our knowledge with others.
Each season we tap around 250-300 trees. We boil our sap in an evaporator over a wood fire.
Our production may be small, but the taste is extraordinary.
